4 cups all-purpose flour

1 ½ cups milk

5 tbsp honey

2 tbsp unsalted butter

1 tsp salt

½ tbsp dry yeast powder


Warm milk in a wide vessel on low flame and set aside.

Add the dry yeast powder to this and stir until it dissolves completely.

Melt the butter and pour it into the vessel along with all-purpose flour, honey and salt.

Beat it into a homogenous mixture to obtain a soft dough.

Knead the dough thoroughly to form a smooth and elastic texture, then put it in a bowl greased with a bit of butter to coat both sides.

Cover the dough and let it sit in a warm place for 1 hour to allow it to rise.

Mould the dough into a long rectangular shape of a loaf, put it in a loaf pan smeared with butter, cover it for 30 minutes so that it rises and doubles.

Preheat oven to 375 Fahrenheit i.e. 190 Celcius and bake for 25 – 35 minutes so the dough turns golden-brown on the top.

Slowly take it out of the oven, remove the loaf from the pan and allow it to cool down a bit.

2 cups oats flour

½ tsp baking soda

1 tsp baking powder

1 tsp cinnamon powder

A pinch of salt

Wet Ingredients:

½ cup coconut oil

2 tbsp sugar

3 tbsp honey

½ cup flax seed extract (ground flax seeds in water)

1 tsp vanilla extract


Preheat the oven to 325 Fahrenheit or 165 Celcius.

Neatly cover an 8-inch loaf pan with parchment paper, folded along the sides.

In a large clean bowl thoroughly whisk together the dry ingredients and in another deep dish, mix the wet ingredients.

Add the blended dry ingredients to the wet ingredients, then transfer the zucchini and chia seeds and whisk well to obtain a uniform mixture with no lumps or dry flour patches.

Pour this thick batter into the 8-inch loaf pan on top of the parchment paper and spread it evenly with a spatula in the form of a loaf.

Bake for 60 – 70 minutes and to check if it is done, insert a toothpick and remove it to see if it comes out clean with just a few soft bits.

Take the loaf pan out of the oven and let it cool for about 30 minutes.

Carefully remove the loaf along with the parchment paper and let it sit at room temperature for another 2 hours.
