Carrot Ginger Basil Soup
3 -4 medium-sized carrots, finely chopped
1 small potato, peeled
1 small onion, cut into pieces
3 cloves of garlic
A small piece of ginger, minced
1 ½ cups water
A sprig of basil leaves

Heat olive oil in a pressure cooker on medium flame, sauté the onion, ginger, garlic for 2 – 3 minutes.
