Mushrooms are used extensively in various cuisines. They can be grilled, stir-fried, baked and can be cooked in to mouthwatering curries that go well with both rice and rotis.

Kadai Mushroom Fry

Kadai mushroom fry is a dry mushroom dish made using freshly ground masala, that enriches the taste and flavour of the dish.


500 gm mushroom, sliced

1 large onion, cubed

1 medium sized capsicum cubed

½ cup tomatoes, chopped

1 tsp ginger, garlic paste

¼ tsp turmeric powder

½ tsp garam masala

2 tsp oil

For Ground Masala

4 red chillies

1 tbsp coriander seeds

½ tsp pepper corns

¼ tsp fennel

¼ tsp jeera

For Garnishing

Dry roast all the spices until crisp and let it cool. Grind it in to a coarse powder and keep it aside.

In a pan, add oil, sauté the diced onion, capsicum for about 5 minutes until soft. Add the ground masala and sauté for few minutes until it turns aromatic.

Now add ginger garlic paste and sauté it raw smell disappears.

Add chopped tomatoes, turmeric and cook until it turns soft and mushy.

Now add mushroom, sprinkle garam masala and cook on a low flame for few minutes.

Garnish with coriander leaves and methi leaves.

Serve with roti or phulka.

Mushroom Manchurian

Mushroom Manchurian is a very popular starter, made using button mushroom. It can be even served as an appetizer, snack or with fried rice or noodles.


200 gms mushroom

4 tbsp all-purpose flour

3 tbsp corn flour

½ tsp pepper powder

¼ tsp red chilli powder

Salt as required

Water for making the batter

Oil for dep frying

For Sauce

1 tbsp oil

½ tbsp garlic finely, chopped

½ tbsp ginger finely, chopped

¼ cup spring onions white, chopped

3tsp soy sauce

4 tsp tomato sauce

2 tsp corn flour

1 tsp sugar

¼ tsp vinegar

1 tsp sugar

Salt as required

½ cup water

Add 1tps corn flour and ½ cup water to make a slurry.

For Garnishing

2 tbsp spring onion chopped


Make a thick batter adding all-purpose flour, corn flour, pepper powder, chilli powder and salt.

Wash and cut the button mushroom into a half, coat well with batter.

Heat oil in a pan and deep fry the mushroom until golden and crisp, drain and keep it aside.

In a pan, add oil and add ginger, garlic fry for few minutes. Add spring onion white fry for 1-2 minutes.

Pour the sauces and add the cornflour slurry, stir well and cook to make a thick sauce.

Add vinegar, sugar and salt mix well to get a thick sauce.

Turn off the flame and allow it cool.

Now add the fried mushroom and coat them well with the sauce.

Garnish with spring onions.
