In a large bowl add finely chopped, ginger, garlic, chillies and mix well.
Now add honey and pepper powder and stir well. Pour this mixture into a glass jar and add apple cider vinegar.
Close the jar tightly and allow it to ferment for 10 days in a cool, dark place or refrigerator.
After fermentation, filter the mixture through a fine-mesh strainer and squeeze out all the essence.
Preserve the essence in the refrigerator.
